Summer is right around the corner and I know that most of you are working on those summer beach bodies. Unfortunately with warmer weather also comes barbecues and maybe some wedding showers here and there (June is the most popular month for brides!). All of these are likely to contain all kinds of food that will make our bodies wonder where all of the nutrients went!
Help bring your taste buds back to reality with this easy and healthy salad recipe. It's one of my weeknight go-to's! The best part is, the only prep work (besides getting out a plate) is steaming broccoli. EASY! So stock up on these few ingredients next time you're at the store and feel redemption with every bite!
The Greenest Salad!
1 head of romaine lettuce (feel free to add in some spinach or lettuce of your choice to increase nutrient content)
1 head broccoli
1 avocado (sliced)
1/3 cup pistachios (chopped)
feta cheese (sprinkle)
dressing of your choice (drizzle)
Start by steaming your broccoli. When it's done to your liking (i like mine really soft), set it aside to cool. Meanwhile, grab your plate and start loading it up with all the goods (avocado, pistachios, and feta cheese). Top with the broccoli and then drizzle w/ your favorite salad dressing. I prefer using a garlic vinaigrette, it brings out great flavor in the broccoli, but feel free to use whatever you have on hand. Just remember, a little goes a long way when it comes to dressing!
